Recipe: Raspberry Coridal (Anne of Green Gables)

Diana poured herself out a tumblerful, looked at its bright-red hue admiringly, and then sipped it daintily. "That's awfully nice raspberry cordial, Anne," she said. "I didn't know raspberry cordial was so nice."



Ingredients:

  • 5 cups fresh raspberries
  • 1 1/4 cups sugar
  • 8 cups boiling water
  • 2 lemons

Directions

1. Place raspberries into a large pot and add the sugar. Cook over medium heat, stirring occasionally, until the raspberries soften and start releasing their juices and all the sugar has dissolved. Mash the raspberries with a spoon or fork.

2. Get two large bowls ready. Put a strainer over one bowl. Pour the mixture through the strainer to extract the juice. Press the raspberries with the back of a spoon to get as much juice as possible out of them. Discard the pulp and rinse the strainer. Put the strainer over the other bowl and pour the mixture through again. Do this as many times as you need to to get rid of most of the pulp and seeds.

(If you don't mind cloudy cordial, you can stop here. But if you want it crystal clear, you'll need to strain it a little more. Rinse the strainer again. line the inside of the strainer with a single layer of damp paper towels or cheesecloth. Pour the raspberry juice through again. This may take a little time to drip through. Do this as many times as you need to, using a clean paper towel or cloth each time, then move on to the next step.)

3. Squeeze the juice out of the 2 lemons. Strain the pulp out and add it to the raspberry juice. Boil 8 cups of water and add to the raspberry juice. Let the mixture cool, then put it in the refrigerator to chill. Add more water to taste.
